Crockpot Chicken Cacciatore
  • 1 large onion, sliced thinly
  • 1 1/2 pounds skinless, boneless chicken breast halves
  • 2 (6 oz. each) cans tomato paste
  • 8 ounces fresh sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 bay leaf
  • 1/4 cup dry white wine
  • 1/4 cup water

Put sliced onion in bottom of slow cooker; top with chicken breast halves. Combine and stir together remaining ingredients. Spread over chicken. Cover and cook on low 6 to 8 hours, or 3 to 4 hours on high. Serve as a sauce over pasta.

I made this recipe for the second time last night and it’s become one of our favorites with one minor change. We added 1/2 teaspoon of crushed red pepper because we like things a little more spicy.
