Hellfire Steaks

Hellfire Steaks
  • 4 T-bone steaks (1 inch thick, about 12 oz each)
  • coarse salt and black pepper
  • 2-3 tablespoons dry mustard
  • 2-3 tablespoons Tabasco or other hot sauce, to taste

1. Place the steaks on a plate and sprinkle on both sides with salt and plenty of pepper and the dry mustard, patting the spices onto the meat with a fork. Drizzle the Tabasco sauce over the steaks, again patting in on with a fork. Let the meat sit while you preheat the grill.
2. Set up the grill for direct grilling.
3. When ready to cook, brush and oil the grill grate. Arrange the steaks on the hot grate. Grill for 4-6 minutes per side for medium-rare. Coarsely grind pepper (to taste) over the steaks as they grill. Transfer the steaks to plates or a platter and let rest for 3 minutes before serving.

This recipe is one of our favorites and we’ve made it many times. We tried it last night with chicken breasts instead of steak, and it was delicious. We tenderized the chicken first, and grilled it for about 6-7 minutes per side. Served with Grilled Corn.

Incidentally, we should stop having grilled corn as the “veggie” with every meal because it’s pretty starchy. As evidenced by the size of my ass and thighs.

* I should just say here that you’re going to see a lot of recipes from this book because it’s really awesome. It’s also an excellent reference for not just newbies, but even seasoned grillmasters like my husband. The recipes aren’t word for word from the book, sometimes I leave out some detail, and I’ll of course be adding my editorial comments.

    mmm, corn isn't considered a veggie in my book, tis a starch.

    Corn = starch
    cheese = protein

    yeppy!

    Both of these recipes sound great. If I grilled I would try them both. Maybe someday. Or I could get someone else to grill them for me! Now that's a plan, I'll just show up to eat.

    I wanted to add this earlier but your comments conked out for some reason –

    Corn & potato = starch
    cheese = protein

    And you do realize that by eating a 12oz steak, thats FOUR TIMES what you need for dinner as a protein serving? That steak would do Keith & I two dinners.

    Oh, yeah, we NEVER eat a whole steak by ourselves. Or even the chicken because the pieces were so big. I think I would vomit if I tried to eat that much meat at once.

    I never said my recipes were going to include fancy things like how many people it serves ;)
